From barista to roaster

A more considered way to roast.

Working as a barista shaped the standards behind Atlas. It taught me that quality is rarely about making the most noise. It comes from care, consistency, and attention to what ends up in the cup.

That same thinking now guides every roast. Atlas is built around coffees with balance, clarity, and character, chosen with intent and roasted to feel both refined and approachable.

Why Atlas exists

I wanted to build the kind of coffee business I would genuinely want to buy from myself: thoughtful, honest, and focused on quality without the gimmicks.

Atlas is still run independently and kept deliberately close to the coffee, the customer, and the standards behind every roast. That closeness is part of what gives the brand its shape.

The Cormorant CR600g fits the way I want to work.

At the centre of Atlas is a hand-built Cormorant CR600g, made in Cornwall. I chose it because it suits the scale and ethos of the business: small-batch roasting, close control, repeatability, and enough precision to treat each roast with proper care.

It is the kind of setup that allows me to stay hands-on and deliberate, rather than chasing scale before the coffee is ready for it.
